Grownup Fried Bologna Sandwich

Qty Size Ingredient
3 slices Troyer's Genuine Trail Bologna
Maple Leaf Big Stick Bologna
2 slices Sourdough Bread
Whole Wheat
Focaccia
2 slices Beefsteak Tomato (thin)
2 slices Cheese*
2 leaves Iceberg Lettuce
2 oz Potato Chips**
¼ cup Jack's Secret Sauce
 
 


Ready the Jack's Secret Sauce, chips, lettuce and slices of cheese (mise en plas).

Liberally butter one side of each slice of the bread.  Heat a large skillet or griddle and lightly brown the bread and set aside.

Reduce heat and maintain temp at 240ºF (min 230 - max 250) to cook bologna slices.  Apply cheese slices once you have flipped bologna so that it melts.
(We need to slow-cook the bologna so it won't curl and so we can control exactly how much GBD.  If you are that impatient, you can make several slits with a knife around the edge of the bologna slices to thwart curling.  But still go slow.)

Assemble sandwich bottom up... bread, secret sauce, tomato, bologna/cheese, bologna/cheese, bologna/cheese, lettuce, secret sauce and bread.  Slice diagonally and plate with chips.  And maybe top with a single Famous Dave's Sweet & Spicy Pickle Chips punctuated with a feathered tooth pick!

* Other cheeses would be American, Velveeta, Monterey Jack, Swiss, Pimento or Mozzarella.  Personally I would use one slice of American, Swiss and Provolone on top of each of the slices of bologna.

** Other sides could be Frito's Original Corn Chips, Lay's BBQ Flavored Chips, Kettle Krinkle Cut Truffle Oil & Sea Salt.
Also acceptable:  Home made Crinkle Cut / Spiral Cut / Shoe String Fries.
